Arugula Salad with Chocolate Orange Vinaigrette

Serves: 4

Ingredients:


  • 12 oz Arugula, washed
  • 2 TBSP Chocolate Dark Balsamic
  • 2 TBSP Blood Orange Olive Oil
  • 1 TBSP Honey
  • 1 TBSP Shallot, minced
  • 1/4 Cup Candied Pecans
  • 1/8 tsp Salt
  • 1/8 tsp Pepper
  • Fruit if desired - Strawberries, Blueberries, Figs, Raisins, Craisins, or Pomegranate seeds


Directions: 

  1. Whisk chocolate balsamic, blood orange olive oil, honey, and salt & pepper in a small bowl. Set aside.
  2. Combine arugula, minced shallot, and candied pecans in a large bowl.
  3. Pour the chocolate orange vinaigrette over the arugula & pecan salad and toss.
  4. Divide and enjoy.
  5. Add fruit of choice if desired.
  6. Season with extra salt & pepper if desired.
