Arugula Salad with Chocolate Orange Vinaigrette

Serves: 4
Ingredients:
- 12 oz Arugula, washed
- 2 TBSP Chocolate Dark Balsamic
- 2 TBSP Blood Orange Olive Oil
- 1 TBSP Honey
- 1 TBSP Shallot, minced
- 1/4 Cup Candied Pecans
- 1/8 tsp Salt
- 1/8 tsp Pepper
- Fruit if desired - Strawberries, Blueberries, Figs, Raisins, Craisins, or Pomegranate seeds
Directions:
- Whisk chocolate balsamic, blood orange olive oil, honey, and salt & pepper in a small bowl. Set aside.
- Combine arugula, minced shallot, and candied pecans in a large bowl.
- Pour the chocolate orange vinaigrette over the arugula & pecan salad and toss.
- Divide and enjoy.
- Add fruit of choice if desired.
- Season with extra salt & pepper if desired.
