Fun Fact

We’ve learned that the fall harvest is almost complete in the Northern Hemisphere! Once we receive word on this year’s results, we’ll be sure to share the details — including the arrival of the 2025 Northern harvest.

While we wait, we’ve introduced a beautiful Spring Harvest Arbosana from Chile. Delicate, fruity, and floral, this Chilean Arbosana has a lovely aroma with low bitterness and gentle pungency, offering a warming peppercorn finish on the back of the palate.

You’ll taste predominant notes of green and ripe apple, with subtle hints of mint, green tea, and fennel, creating an oil that is harmonious, approachable, and versatile.

For now, Arbosana is temporarily replacing our Arbequina, which will be out of stock until the new crush arrives around the start of the new year.

Pairing of the Month: We Couldn't Pick Just One!

With so many incredible flavors in store this season, we simply couldn’t narrow it down to just one pairing! Whether you’re roasting, dipping, or dressing, these combinations are perfect for adding warmth and brightness to your holiday dishes:

- Bourbon Maple Balsamic + Blood Orange Olive Oil — rich, sweet, and citrusy.

-
Fig Balsamic + Tuscan Herb Olive Oil — a classic and savory pairing

- Gremolata Olive Oil + Sicilian Lemon Balsamic — vibrant and zesty.

- Herbes de Provence Olive Oil + Harvest Apple Balsamic — earthy and sweet.

Mix, match, and drizzle to your heart’s content — after all, the best pairing is the one you love most!

Product Reintroduction & Education: Our Imported Olives

At Zionsville Olive Oil, we’re excited to reintroduce and expand our line of Imported Olives — and share what makes ours so unique!

Unlike many mass-produced olives, our olives are not soaked in a lye solution. Traditionally, some producers submerge olives in a strong alkali (lye) bath to speed up the curing process. The goal is for the lye to penetrate into the flesh, hydrolyzing the bitter phenolics and softening the tissue. However, this method often results in mushy texture and loss of natural flavor.

Our process is different. We never use lye. Instead, our olives are naturally cured using vinegar and salt, which gently penetrate the flesh and remove bitterness while maintaining a crisper, more authentic texture and a beautifully balanced flavor.

We’ve also expanded our olive selection! In addition to our customer favorites — Blue Cheese Stuffed, Lemon Stuffed, Garlic Stuffed, and Queen Olives — we now offer:

- Pitted Kalamata Olives
- Smoked Pitted Kalamata Olives
- Green Olive Tapenade
- Kalamata Olive Tapenade

Stop in to sample these delicious additions and taste the difference that natural curing makes!
