Olive Oil Pound Cake

Ingredients:
- 3/4 Cup Olive Oil
- 1 1/2 Cup Granulated Sugar
- 3 Large Eggs, room temperature
- 1/2 Cup Milk
- Pinch of Each: Nutmeg & Cinnamon
- 2 tsp Baking Powder
- 1 TBSP Each: vanilla extract, lemon zest & lemon juice
- 2 Cups All-Purpose Flour
- Additional Flavor Recommendations: Olive Oil, Savory Butter Olive Oil, Italian Lemon Olive Oil
Directions:
- Preheat over to 350 degrees.
- Grease a 9" x 5" loaf pan or line with parchment paper.
- In large mixing bowl, whisk the olive oil, sugar, eggs, vanilla, lemon juice and milk until combined.
- Stir in the lemon zest, baking powder, salt, nutmeg and cinnamon.
- Fold in the four until just combined. If you over-mix, the pound cake will come out tough.
- Pour the batter into your loaf pan and bake for 55-65 minutes or until a fork comes out clean. Once done, remove from oven and place on a wire rack to cool. Dust with powdered sugar if desired.
