Sweet Potato Fries

Ingredients:
- 2 Medium Sweet Potatoes
- 2 TBSP Gremolata Olive Oil
- 1/4 Cup Italian Fig Balsamic Vinegar
- 1 tsp Salt
- 1/4 tsp Garlic Powder or Fresh Minced Garlic
- 1/4 tsp Sweet Paprika
- 8oz Feta or Blue Cheese Crumbles (optional)
- 2 TBSP Chopped Walnuts (optional)
- 1/2 tsp Black Pepper
- Additional Flavor Recommendations: Family Reserve Olive Oil, Arbequina Olive Oil, Herbes De Provence Olive Oil, Harvest Apple Balsamic, Traditional 18 Year Balsamic, Lavender Balsamic
Directions:
- Preheat oven to 400°. Line baking sheet with parchment paper.
- Thinly slice sweet potatoes into skinny fry-like slices.
- In a bowl, mix Gremolata Olive Oil, salt, garlic & sweet paprika together. Add the sweet potato fries and toss until well coated.
- Place fries on baking sheet and bake for 35 minutes until fries begin to crisp and turn golden brown.
- While fries are baking, place Italian Fig Balsamic in a small saucepan and bring to boil. Turn down to simmer and let the balsamic reduce by half until the balsamic is thick enough to coat the back of a spoon.
- Remove fries from oven and top with cheese and walnuts if desired. Drizzle the balsamic glaze over fries and serve immediately.
