Roasted Asparagus with Strawberries & Basil
Serves: 4
Ingredients:
- • 1 bunch asparagus, trimmed
- • 2 shallots, peeled and quartered
- • 2 garlic cloves, peeled and minced
- • 2 tablespoons Basil Pressato Olive Oil, plus extra for drizzling
- • 2 tablespoons Strawberry Dark Balsamic Vinegar, plus extra for drizzling
- • 1 teaspoon sea salt
- • Pinch of cracked black pepper
- • 1 cup fresh strawberries, trimmed and diced
- • ¼ cup feta cheese, crumbled
- • 2 tablespoons fresh basil, chopped
Instructions:
1. Preheat the oven to broil on high. Line a large baking sheet with aluminum foil.
2. Spread asparagus, shallots, and garlic in a single layer. Drizzle with Basil Pressato Olive Oil and Strawberry Balsamic, then sprinkle with salt and pepper.
3. Broil for 10–12 minutes, or until asparagus is blistered and tender.
4. Remove from oven and top with fresh strawberries, crumbled feta, and chopped basil.
5. Finish with a final drizzle of Basil Pressato Olive Oil and Strawberry Balsamic before serving.
