Roasted Cauliflower

Time: 1 Hour • Serves: 4
Ingredients:
- 1 Head of Cauliflower, cut into florets
- 2 TBSP Extra Virgin Olive Oil
- 2 TBSP Harvest Apple Balsamic Vinegar
- 4 Apples, peeled & cut into thick slices
- 4 Strips of Bacon, chopped
- Sea Salt & Ground Black Pepper
Directions:
- Toss cauliflower florets in the vinegar for 1 hour.
- Preheat oven to 400 ° F. Drizzle 1 TBSP of olive oil on baking sheet.
- Spread out the cauliflower and apple slices on the prepared baking sheet and cover with the chopped bacon and salt & pepper. Drizzle with remaining olive oil.
- Cover the baking sheet with foil or parchment paper and roast for 40 minutes.
- Remove from the oven and uncover. Using spatula, flip the cauliflower mixture.
- Place back in the oven and roast for another 15 minutes, or until the cauliflower is tender and the bacon is crisp.
- Drizzle with leftover Harvest Apple Balsamic and serve.
