Roasted Cauliflower

Time: 1 Hour • Serves: 4

Ingredients:


  • 1 Head of Cauliflower, cut into florets
  • 2 TBSP Extra Virgin Olive Oil
  • 2 TBSP Harvest Apple Balsamic Vinegar
  • 4 Apples, peeled & cut into thick slices
  • 4 Strips of Bacon, chopped
  • Sea Salt & Ground Black Pepper

Directions:


  1. Toss cauliflower florets in the vinegar for 1 hour.
  2. Preheat oven to 400 ° F. Drizzle 1 TBSP of olive oil on baking sheet.
  3. Spread out the cauliflower and apple slices on the prepared baking sheet and cover with the chopped bacon and salt & pepper. Drizzle with remaining olive oil.
  4. Cover the baking sheet with foil or parchment paper and roast for 40 minutes.
  5. Remove from the oven and uncover. Using spatula, flip the cauliflower mixture.
  6. Place back in the oven and roast for another 15 minutes, or until the cauliflower is tender and the bacon is crisp.
  7. Drizzle with leftover Harvest Apple Balsamic and serve.
