Roasted Lemon Chicken

Time: 3 Hours • Serves: 4

Ingredients:

  •  1/4 Cup Garlic Olive Oil
  • 1/4 Cup Sicilian Lemon Balsamic Vinegar
  • 4 Chicken Breasts
  • 2 TBSP Dijon Mustard
  • 2 TBSP Chopped Parsley
  • Additional Flavor Recommendations: Italian Lemon Olive Oil, Tuscan Herb Olive Oil, Herbes De Provence Olive Oil

Directions:

  1. Whisk together all the ingredients and pour into a ziplock bag or casserole dish.
  2. Add chicken breasts to the marinade mix and allow to marinate for 2-3 hours or overnight in the refrigerator.
  3. Preheat grill or oven to 400°
  4. Salt & Pepper to taste.
  5. Grill chicken until completely cooked or bake in oven on a baking tray and drizzle with leftover marinage. Bake uncovered for 30 minutes until chicken is completely cooked.
